    Cheesy Corn Cakes

    List of Ingredients




    2 c Hungry Jack Mashed potato flakes
    1 11oz can mexicorn (corn with red and green peppers)
    1 c shredded cheese
    2 tbl flour
    2 tble cornmeal
    1 1/2 tsp Lawrys salt
    1 tsp basil leaves
    1/2 tsp garlic powder
    pepper
    2 c milk
    1 beaten egg
    1/4 cup butter
    garted parm cheese

    Recipe



    In large bowl, combine potato flakes, corn, cheese, flour, cornmeal, lawry's,basil, garlic and pepper. Mix well. Add milk and egg, mix again. Let stand 3 minutes

    Melt 2 tbls of the butter in skillet over medium heat. Drop potato mixture by 1/4 cupfuls into pan. Carefully press each to form a 3 inch round. Cok 6-8 minutes until golden brown. (turn). Sprinkle with parm and drizzle remaining butter over tops while warm.
