    • 2 2/3 c. sugar
    • 2/3 c. light corn syrup
    • 1/2 c. water
    • 2 egg whites
    • 1 t. vanilla
    • 2/3 c. chopped nuts


    Instructions


    1. Cook sugar, corn syrup, and water in 2-quart saucepan over low heat, stirring constantly, until sugar is dissolved. Cook without stirring to 260 on a candy thermometer or until a small amount of mixture
      dropped into very cold water forms a hard ball.
    2. Beat egg whites until stiff peaks form. Continue beating while pouring hot syrup in a thin stream into egg whites. Add vanilla. Beat until mixture holds its shape and becomes slightly dull. Fold in nuts.
    3. Drop mixture onto waxed paper. Let stand until set.

    4. My notes: I cant imagine doing this without a stand mixer. I wouldn't even want to try it without one. Also, I added a little red(pink) food coloring to the syrup when it was done.
