Low Fat Oatmeal Raisin Cookies

- butter-flavored cooking spray
- 2 cups rolled oats
- 1 1/2 cups unbleached all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 2/3 cup raisins
- 1 large egg OR 1/4 cup egg substitute
- 3 tablespoons cooking oil
- 3/4 cup applesauce
- 1 1/2 teaspoons vanilla extract
- 1/3 cup light brown sugar
- 1/3 cup granulated sugar
Instructions
- Preheat oven to 350�F . Lightly spray a cookie sheet with cooking spray. In a large bowl, combine oats, flour, baking soda, cinnamon, nutmeg, and salt. Toss with raisins.
- In a medium bowl, cream together egg, canola oil, applesauce, vanilla, and the sugars.
- Mix everything together well. Drop by the tablespoonful onto prepared cookie sheet. Bake for 12 to 15 minutes until golden brown.
Final Comments
For almost any recipe you have , you can substitute applesauce for the liquid oil in the recipe. Example, if a cake mix calls for 1/2 cup oil, you CAN use 1/2 cup applesauce instead. Or you can use 1/4 cup oil and 1/4 cup applesauce. PLEASE, use UNSWEETENED applesauce so you are not just adding a bunch of sugar.
Carbohydrates are 4 calories per gram. Protein is 4 calories per gram. Fat is 9, yes I said 9 calories per gram. That's why it helps to watch the fat. It is over 2 times higher in calories than carbs or protein.
These cookies are good and kids like them. Some might say they are not sweet enough, but it is a natural sweet, not just added sugar.
