- 1 envelope active dry yeast
- 1/2 cup warm water
- 1 cup milk
- 1/2 cup sugar
- 1 cup mashed potatoes
- 1 1/2 tsp. salt
- 2/3 cup butter flavored shortening
- 2 large eggs
- 5 to 6 cups all purpose flour
Instructions
- combine yeast and warm water, let stand 5 minutes
- combine milk and next 3 ingredients in small sauce pan
- cook, stirring until mixture begins to simmer Pour over shortening in a bowl and stir until shortening melts
- combine yeast mixture, milk mixture, and eggs in a large mixing bowl
- gradually add 3 cups flour, beating until smooth
- stir in remaining flour to make a soft dough
- place in a well greased bowl, turning to grease top of dough. cover and chill 8 hours
- punch dough down, turn out onto a floured surface,knead 4 or 5 times
- shape dough into 3/4 inch balls, place 3 balls in each well greased muffin pan. let rise
- Bake at 425 for 8 to 10 minutes or until golden brown
- Yield 2 1/2 dozen
