    • 1 envelope active dry yeast
    • 1/2 cup warm water
    • 1 cup milk
    • 1/2 cup sugar
    • 1 cup mashed potatoes
    • 1 1/2 tsp. salt
    • 2/3 cup butter flavored shortening
    • 2 large eggs
    • 5 to 6 cups all purpose flour


    Instructions


    1. combine yeast and warm water, let stand 5 minutes
    2. combine milk and next 3 ingredients in small sauce pan
    3. cook, stirring until mixture begins to simmer Pour over shortening in a bowl and stir until shortening melts
    4. combine yeast mixture, milk mixture, and eggs in a large mixing bowl
    5. gradually add 3 cups flour, beating until smooth
    6. stir in remaining flour to make a soft dough
    7. place in a well greased bowl, turning to grease top of dough. cover and chill 8 hours
    8. punch dough down, turn out onto a floured surface,knead 4 or 5 times
    9. shape dough into 3/4 inch balls, place 3 balls in each well greased muffin pan. let rise
    10. Bake at 425 for 8 to 10 minutes or until golden brown
    11. Yield 2 1/2 dozen
