LOWFAT CHOCOLATE CHEESECAKE

Makes 12 servings @ 4 pts each slice.
List of Ingredients
Crust:
18 reduced fat oreo cookies, finely crushed
Filling:
3-8 oz packages nonfat cream cheese
1 C nonfat ricotta cheese
1 C Splenda sweetner
3 Egg whites
1 Whole egg
1-1/2 tsp vanilla
zest of one lemon
Topping:
1/2 C semi-sweet chocolate chips
1/4 C nonfat evaporated milk
Recipe
Preheat oven to 325 F. Press crumbs into bottom of 9-inch springform pan.
Mix cheeses and sugar together until smooth. Add egg and egg whites, one at a time, mixing well after each addition. Blend in vanilla and lemon rind. Bake for 50-60 minutes. (Cheesecake will set up while it's cooling. I cooked it for 60 min and when I checked it with a knife it was still runny. It had "set up" by the next day when I served it.)
Cool completely. Loosen cake from rim of pan with knife. Remove rim of pan. Melt chocolate chips with nonfat evaporated milk over low heat, stirring constantly until smooth. Spread over top of cheesecake, with some dripping down the sides.
Chill.
