    24 muffins – 4 points each

    List of Ingredients




    1 egg
    1 1/3 cups mashed ripe banana
    ¾ cup packed brown sugar
    1/3 cup applesauce
    1 tsp. Vanilla extract
    1 cup all-purpose flour
    ½ tsp. Baking soda
    2 tsp. Baking powder
    1 ¼ tsp. Salt
    1 tsp. Ground cinnamon
    1 cup quick cooking oats
    ½ cup semisweet chocolate chips
    ½ cup chopped walnuts

    Recipe



    Preheat oven to 350 degrees. Lightly grease two (2) 12-cup muffin pans. (I put paper cups and spray them with Pam).

    In a large bowl, combine egg, banana, brown sugar, applesauce and vanilla. In a separate bowl, sift together flour, baking soda, baking powder, salt and cinnamon.

    Gently stir flour mixture and oatmeal into banana mixture. Fold in chocolate chips and walnuts. Divide batter into prepared muffin cups.

    Bake in preheated oven for 15-20 minutes, or until light brown. Remove muffins from pan and place on wire rack to cool completely.

    **These will keep for a day or so at room temperature. After that (if there are any left), refrigerate to prevent spoilage.

    Also, the original recipe SAYS it makes 12 muffins but every time I’ve made them, it makes 24 so that is how I put this recipe through the WW Recipe Builder.
