List of Ingredients
1 can (15 oz) black beans-rinsed and drained
2 cups fresh or frozen corn
2 jalapeno peppers ,seeded and finely chopped
2 tomatoes ,seeded and chopped
1/2 cup onion, chopped
2 cloves garlic, minced
1/4 cup cilantro, chopped
2 TBLS fresh lime juice
1 TBLS olive oil
2 tsp Southwestern-style seasoning
1/4 tsp salt
Recipe
In a large bowl, combine beans, corn, peppers, onion, garlic, tomatoes, and cilantro.
In a small bowl, combine the lime juice, oil, seasoning mix, and salt. Pour this over the vegetables. Cover and refrigerate for at least 1 hour, longer if possible, for the flavors to develop.
