3 pounds plum tomato(es)
1 large vidalia onion(s)
3 Tbsp balsamic vinegar
4 tsp minced garlic
Salt & Pepper to taste

Adjust racks to divide oven into thirds. Preheat oven to 375 degreees. Spray 2 large non-stick baking pans/sheets with Olive-0il nonstick spray.
Arrange quartered tomatoes and quartered onions in single layers on the pans. Sprinkle with vinegar, garlic, salt & pepper, the spray lightly with olive-oil nonstick spray.
Roast, switching pans from one shelf to the other halfway through cooking, until tomtoes and onions are lightly browned and have an intense, sweet aroma, 50-55 minutes.
Transfer cooled tomatoes and onions to food processor; pulse until mixture is combined but still a bit chunky.
