Broccoli and Cheese Casserole

8 servings (or could be 10 depending on your eaters!)
List of Ingredients
10 1/2 oz. broccoli steamed and chopped. Best if fresh.
1 cup cooked white rice
1 stick of Light margerine
1 can Cream of Celery-98% fat free
1 lb Velvetta Light- diced
1 sleeve Low Fat ritz crackers- crushed
Recipe
Pre-heat oven to 350.
Spray 9X13 glass dish or similiar.
Steam Broccoli until completely tender
Cook rice according to package directions.
Microwave butter, soup, and cheese until melted.
Chop Broccoli mix all other ingredients (except crackers). Pour into 9X13 baking dish. Crush crackers on top evenly. Bake at 350 for 30 minutes.
