    Caramel Apple Cream Pie

    List of Ingredients




    1/2 cup packed brown sugar
    4 medium tart apples pealed and cut in 1/2 inch chunks
    1 1/2 teaspoon pumpkin pie spice
    1-2 tablespoons flour
    1/2 cup caramel ice cream topping
    1/2 cup chopped pecans
    1-8 ounce softened cream cheese
    1/4 cup sugar
    1 egg
    1 tablespoon lemon juice
    1 tablespoon vanilla
    whipped topping

    Bake pie shell but do not prick(place aluminum foil in uncooked shell and add about 2 cups of uncooked rice to weigh the shell down so it won't bubble up.) Cool. In a large skillet melt butter over medium heat. Stir in apples and 1 teaspoon of the pie spice. Simmer for 12-15 minutes; stir in flour; cook and stir 1 minute. Drizzle caramel over pie shell, sprinkle with pecans. Spoon apple mix over pecans and set aside. In a mixing bowl mix cream cheese, sugar, egg, lemon juice and vanilla; beat till smooth. Pour over apples. Bake at 350 degrees for 35-45 minutes or till knife comes out clean. Cool on wire rack. Chill thouroghly. Serve topped with whipped cream; sprinkle with remainig pie spice. Serves 8
