Dutch Apple Cake
List of Ingredients
3 medium peeled tart apples sliced 1/4 inch thick (3 cups)
1 cup plus 3 tablespoons sugar divided
1 teaspoon cinnamon
2/3 cup butter or margarine softened
4 eggs
1 teaspoon vanilla
2 cups flour
1/8 teaspoon salt
Recipe
In a bowl combine apples, 3 tablespoons sugar,and cinnamon; let stand 1 hour. In another bowl, cream butter and the rest of sugar. Add the eggs 1 at a time, beat well after each addition. Add vanilla. Combine flour and salt; gradually add to creamed mixture and beat till smooth. Pour into a greased 9x5x3 loaf pan. Push apple slices vertically into batter, placing them close togeher. Bake 300 degrees for 1 hour and 40 minutes or till toothpick near center comes out clean. Cool for 10 minutes on a wire rack, remove from pan. Serve warm. Yield: 10-12 servings.
