    Battered French Toast

    List of Ingredients




    seves 4 to 6
    2 eggs
    1 cup sifted flour
    1 cup milk
    1 1/2 teaspoons baking powder
    1/2 teaspoon salt
    1 teaspoon cinnamon
    1 teaspoon vanilla
    8 slices day old, firm, white bread
    7 tablespoons butter or margarine
    3 tablespoons oil
    Powdered sugar
    Raspberry or pineapple jam

    Recipe



    Process eggs in a blender until frothy. Add the flour, milk, baking powder, salt. cinnamon and vanilla, and whip until smooth. Pour batter into a shallow baking dish or pie pan. Cut bread slices in half, forming triangles. Set aside, in large skillet heat 2 tablespoons of butter and 1 tablespoon oil.

    While this is heating, soak bread in batter, turning to absorb egg/milk mixture on both sides. Drain and fry in the hot oil and butter, 2 pieces at a time. Add more oil and butter as needed. Keep turning the slices until they are golden brown on both sides.

    Remove to a heated platter while remaining bread is cooked. Dust with powdered sugar and serve hot with jam.
