    Hole-In-One Doughnut Drops

    List of Ingredients




    8 cups canola oil
    2 large eggs
    1/2 cup heavy cream
    1/4 cup sugar
    1 1/2 teaspoon vanilla
    pinch of salt
    1 1/2 cups flour
    1/2 cup powdered sugar

    Recipe



    In a heavy 4 quart saucepan, heat oil over medium heat till it reaches 350 degrees. Meanwhile, in a medium bowl, whisk together egggs, cream, sugar, baking powder, vanilla, and salt. Whisk in flour till smooth. Add batter by level tablespoonfuls to hot oil, making about 10 doughnut drops at a time. Fry about 3 minutes, or till golden brown, turning once or twice during frying. With a slotted spoon, transfer to paper towls and fry remaining drops. Let cool slightly. Place powdered sugar in bowl. Roll warm doughnuts in sugar to coat well. Let cool slightly the roll again in powdered sugar. Chocolate doughnuts: substitute 1/2 cup cocoa powder for 1/2 cup of the flour.
