2 (6-inch) corn tortillas, cut into 1-inch pieces
2 tablespoons vegetable Oil
1/4 cup chopped onion
1/4 cup chopped tomato
2 tablespoons chopped green bell pepper
4 large eggs
1/2 teaspoon salt
1 teaspoon pepper Recipe
Cook tortilla squares in 1 tablespoon hot oil in a nonstick skillet over medium heat, stirring constantly, until crisp; remove from skillet.
Add onion, tomato, and bell pepper to skillet; sauté until tender. Remove from skillet.
Stir together eggs, salt, and pepper. Add to remaining 1 tablespoon oil in hot skillet; cook, without stirring, until eggs begin to set on bottom. Draw a spatula across bottom of pan to form large curds.
Add tortilla squares and cooked vegetables to eggs; cook until eggs are firm but still moist. Do not stir constantly. Serve immediately with salsa, if desired.
