Pancakes or Waffles

I received this recipe from one of my kids high school home economics teachers. It's the best recipe for those lazy mornings when you want to do something special for the family.
(Makes 4 to 6, 4-inch pancakes or 4 large waffles)
2/3 cup flour
1 tablespoon sugar
1 teaspoon baking powder
1/4 teaspoon salt
1 egg, slightly beaten
1/2 cup milk
1 tablespoon cooking oil

(Makes 10 to 12, 4-inch pancakes or 8-10 waffles)
1 cup sifted flour
2 tablespoons sugar
2 tablespoons baking powder
1/2 teaspoon salt
2 eggs, slightly beaten
1 cup milk
2 tablespoons cooking oil Recipe
Combine first four ingredients; sift into mixing bowl. Combine eggs, milk and oil; stir into dry ingredients. Mix just enough to moisten dry ingredients with a whisk. For each pancake, pour 1/4 cup batter into hot, well-greased griddle or fry pan. Brown on underside, turn and brown second side. For waffles fill wafflemaker within 1/2 inch of sides. Close waffle maker and cook till steam stops. Serve hot with butter, syrup and/or powdered sugar.
