Stuffed french toast
List of Ingredients
4 slices white or wheat bread (1/4" thick)
1/2 of an 8 ounce light cream cheese (softened)
3 tablespoons fruit spread or jam
2/3 cup milk
2 eggs
1 teaspoon sugar
1 teaspoon vanilla
1/2 teaspoon cinnamon
2 cups sliced fruit (strawberries, peaches, nectarines, etc.)
2 tablespoons powdered sugar Recipe
Cut each bread slice in half crosswise. With a sharp knife cut a horizontal slit in each half slice to make a pocket. In a medium bowl combine cream cheese and fruit spread. Stir till smooth. Spread 1/8 of the mixture in each bread pocket. Pinch edges of bread together to hold filling. In a shallow bowl whisk together milk, egg, sugar, vanilla and cinnamon. Dip filled bread in egg mixture to coat. Cook about 6 minutes or till golden turning once. Top with sliced fruit and sprinkle powdered sugar over the top. Makes 4 servings
