    Lemon Cheesecake Bars (microwave)

    List of Ingredients




    1/2 cup butter or margarine
    1/2 cup brown sugar, packed
    1/4 teaspoon salt
    1 cup quick-cooking rolled oats
    1 cup flour
    1-8 ounce package cream cheese
    1/3 cup sugar
    1 egg
    1 tablespoon grated lemon peel
    2 tablespoons lemon juice
    1 tablespoon milk

    Lemon drizzle:
    1/2 cup powdered sugar
    1 tablespoon fresh lemon juice

    Mix butter, brown sugar and salt. Add oats and flour. Beat at low speed till particles are finely crumbled. Reserve one cup. Press remaining mixture into an 8x8 microwavable baking dish. Microwave at 50 percent power for 3 to 7 1/2 (depending on wattage on microwave), minutes or till almost set.

    Microwave cream cheese in small microwavable mixing bowl at 50 percent power for 30 seconds. Add remaining ingredients, blend well. Spread over base. Sprinkle with reserved crumb mixture. Microwave on high for 6 to10 minutes (depending on wattage on microwave) or till firm in center. Cool. Drizzle with glaze. Refrigerate. Cut when completely cooled. Serves 9.
