These are so much easier than the regular cookies with the jam middles. Try and see for yourself.
List of Ingredients
3/4 Cup Butter or 1/2 Cup Margarine
1 1/2 Cups sifted flour
3/4 Cup light brown sugar, plus 1 Cup Light
brown sugar to be used for topping
1 1/2 Cups oatmeal
2 Egg yolks, separated from whites - save the whites for later
1 teaspoon Vanilla
1/2 teaspoon baking soda
Apricot Preserves or Raspberry Preserves or
any flavor you like. Jelly works too.
Chopped Nuts (your choice)

Cream butter or margarine. Add egg yolks. Add brown sugar. Beat well. Sift flour and baking soda and add to the butter, egg yolk, brown sugar mixture. Add vanilla and rolled oats. Mixture will be too dry to do with a mixer, so mix by hand. Grease a cookie sheet.
Wet your hands lightly and spread batter out over the cookie sheet. Spread preserves of your choice (one flavor) over the batter. Beat egg whites nice and stiff, adding 1Cup brown sugar slowly to beaten egg whites (looks like marshmallow spread). Spread this over the jelly, sprinkle with chopped nuts over the top of this 'meringue'.
Bake in 350 degree oven for 25-30 minutes. Cut in squares while warm.
