Pineapple Bars
List of Ingredients
2 cups flour
1 cup margarine
2 tablespoons brown sugar,packed
3 tablespoons cornstarch
1/2 cup sugar
1 can (13 1/2 ounce) crushed pineapple, undrained
3/4 cup chopped maraschino cherries
2 tablespoons maraschino cherry juice
3 egg whites
1/2 cup packed brown sugar
1 cup flaked coconutRecipe
Combine flour, margarine and 2 tablespoons brown sugar, press into a 9x13 inch baking pan. Bake at 350 degrees for 20 minutes. Combine cornstarch and sugar in a medium saucepan. Add undrained pineapple, cherries and cherry juice. Bring to a boil, stirring and cooking till thick. Spread over baked crudt. Beat egg whites till soft peaks form. Gradually beat in 1/2 cup brown sugar till stiff. Fold in coconut and spread over fruit filling. Bake at 350 degrees for 15 minutes till brown. Cool before cutting. Makes about 25.
