    Power Bars

    List of Ingredients




    Makes 25 bars

    1 cup (2 sticks) butter, softened
    1 cup granulated sugar
    1/2 cup packed brown sugar
    2 eggs
    1 teaspoon vanilla extract
    2 cups flour
    1 teaspoon salt
    1 teaspoon baking soda
    1 1/2 cups rolled oats
    1 cup sweetened dried cranberries*
    1 cup chopped pecans*

    Recipe



    Preheat the oven to 375 degrees. Coat a 10x15-inch rimmed baking sheet with nonstick cooking spray.

    In a large bowl, cream together the butter, sugars, eggs, and vanilla. Stir in the flour, salt, baking soda, and oats; mix well. Stir in the cranberries and pecans.

    Spread the mixture over the baking sheet and bake for 20 to 25 minutes, or until a wooden toothpick inserted in the center comes out clean. Allow to cool, then cut into bars and serve.

    *If you have a favorite combination of dried fruit and nuts, like raisins and peanuts or dried cherries and walnuts, go ahead and substitute them for the cranberries and pecans in here.
