    Rhubarb Dream Bars

    List of Ingredients




    Crust:
    2 cups flour
    3/4 cup confectioners sugar
    1 cup butter (or oleo)

    Filling:
    4 eggs
    2 cups sugar
    1/2 cup flour
    1/2 teaspoon salt
    4 cups diced rhubarb

    Recipe



    For crust - combine flour and sugar; cut in butter until crumbs form. Press onto bottom of 15x10x1 jelly-roll pan. Bake at 350degrees for 15 minutes. While crust is baking, prepare filling.

    Filling:
    Blend eggs, sugar, flour and salt until smooth. Fold in rhubarb. Spread over hot crust. Bake 40-45 minutes on 350 degrees until filling is lightly browned. Cool; Cut into squares or bars.

    (I like to add a dash of cinnamon and nutmeg.)
