    Baked Beef Stew

    List of Ingredients




    1 can (14 1/2 ounces) diced tomatoes, undrained
    1 cup water
    3 tablespoons quick-cooking tapioca
    2 teaspoons sugar
    1 1/2 teaspoons salt
    1/2 teaspoon pepper
    2 pounds lean beef stew meat, cut into 1 inch cubes (or 1 pound lean ground chuck shaped into walnut sized balls)
    4 medium carrots, cut into 1 inch chunks
    3 medium potatoes, peeled and quartered
    2 stalks of celery, cut into 3/4 inch chunks
    1 medium onion, cut into chunks
    1 slice bread, cubed
    1/2 cup sour cream*, optional

    Recipe



    In a large bowl, combine the first 6 ingredients; stir. Add remaining ingredients; mix. Pour into a greased 13 x 9 x 2 inch or 3 quart baking dish (I used my slow cooker pan and lid). Cover and bake at 350 degrees for 60-100 minutes or till all is tender. Serve in bread bowls. Makes 6-8 servings. *put a dollop of sour cream over each serving, if desired.
