Bogracs Gulyas (Kettle Goulash)

This Hungarian oven main dish features cubes of hearty beef seasoned with garlic and lots of Hungarian paprika.
Prep: 30 MINUTES
Baking: 1 1/2 HOUR
3 cups chopped onion
1 1/2 cups coarsely chopped green sweet pepper
3 cloves garlic, minced
2 Tablespoons bacon drippings or cooking oil
4 teaspoons Hungarian paprika or regular paprika
3 pounds beef stew meat, cut into 1-inch cubes
1-6-oz. can tomato paste
1/2 cup water
1/4 teaspoon salt
1/4 teaspoon ground black pepper

In 4 or 4 1/2-quart Dutch oven, cook onion, green pepper, and garlic in hot bacon drippings or oil about 5 minutes or until almost tender, stirring occasionally. Stir in paprika and cook 2 minutes. Stir in beef cubes, tomato paste, water, salt, and black pepper. Cover and bake in a 325 degree oven for 1 1/2 to 2 hours or until meat is tender. Serve over noodles; pass sour cream. Makes 8 servings.
