Meat Loaf Muffin

2 pounds of your favorite ground beef meatloaf mixture

Preheat oven to 400 degrees. Coat six-2 1/2 inch size muffin pan cups with non-stick coating spray. In a large bowl mix the meatloaf. Divide the beef mixture evenly into the 6 muffin cups, pressing the mixture together lightly to form mounded tops. Spread ketchup over the tops.

Place the muffin pan on a rimmed baking sheet and bake 25 to 30 minutes or till the beef is no longer pink inside and the juices run clear. Using a spoon, remove the "muffins" from the pan. Place them in paper baking liners and serve.

** you can pipe tinted mashed potatoes in a decorative manner over the top of the "muffins" to resemble icing and place under broiler for last 2 minutes of cooking time. Then place in muffin liners as stated and serve.
