Melt-in-Your-Mouth Swiss Steak
List of Ingredients
1/2 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
4 beef cube steaks (about 6 ounces each)
1/4 cup plus 2 tablespoons vegetable oil
3/4 cup chopped celery (2 to 3 ribs)
1 small onion, chopped
1 can (14 1/2 ounces) sliced carrots, drained
1 jar (28 ounces) spaghetti sauce Recipe
In a shallow bowl, combine flour, salt, and black pepper. Add steaks and turn to coat lightly.
In a large skillet, heat 1/4 cup of the oil over medium-high heat. Add the steaks and cook 3 to 4 minutes on each side. Remove the steaks from the skillet and set aside.
Heat the remaining 2 tablespoons oil in the same skillet over medium-high heat. Add celery and onion and cook 5 minutes, or until tender, stirring occasionally. Add carrots and spaghetti sauce; mix well. Add the reserved steaks to the sauce mixture, reduce heat to low and simmer 10 to 12 minutes, or until the steaks are cooked through. Serves 4
