    Pimento Steak

    List of Ingredients




    2 flank steaks, 1 pound each
    1 tablespoon olive oil
    1 tablespoon butter or margarine
    1 slice bacon, diced
    1/2 cup diced, onion
    1/4 cup chopped parsley
    1 clove garlic, whole
    1/2 teaspoon black pepper
    1/4 cup red wine
    1 jar (4 ounces) pimentoes, drained
    salt to taste

    Recipe



    Cut eack steak into 4 pieces. Pound meat with a mallet till very thin. Cut into 1-inch strips. In large skillet, heat oil, butter and bacon. Brown the onion. Add the beef. Cook for 10 minutes. Stir in parsley, garlic, and pepper, mixing well. Cook and leave over heat 5 minutes longer. Add pimentoes and salt to taste. Cook 5-10 minutes or till meat is done to your liking. Serves 4 large portions.
