    Summer Sausage

    List of Ingredients




    5 pounds hamburger (not too lean)
    5 tablespoons tender quick curing salt
    2 1/2 teaspoons mustard seed
    2 1/2 teaspoons garlic salt
    2 1/2 teaspoons cracked blacked pepper
    1 teaspoon hickory salt
    1 teaspoon liquid smoke

    Recipe



    Mix all the ingredients together. Cover with plastic wrap and set in refigerator. Each day for 3 days, take out and mix again. On the third day, shape the mix into four rolls 10 to 12 inches long. Bake on a broiler pan for 4 hours at 150 degrees. Turn rolls over and bake for 4 more hours. Cool. Wrap in foil and refrigerate or freeze.
