Easy Pineapple Upside-Down Cake

Makes 9 to 12 Servings
2 Tablespoons margarine or butter
1/4 cup packed brown sugar
1 can (8 & 3/4 oz.) sliced pineapple, drained
1 1/2 cup Bisquick
1/2 cup sugar
1 egg
1/2 cup milk or water
2 Tablespoons shortening
1 teaspoon vanilla Recipe
Preheat oven to 350 degrees. Spray an 8x8x2 inch square or 9x1 1/2 inch round cake pan with nostick spray. Heat margarine in prepared pan in oven until melted. Sprinkle brown sugar over margarine. Arrange pineapple slices on sugar mixture. Decorate with maraschino cherries and walnut or pecan halves if desired. Beat remaining ingredients in large bowl on low speed, scraping bowl constantly, 30 seconds. Beat on medium speed, scraping bowl occasionally, 4 minutes. Pour batter over pineapple. Bake until wooden pick inserted in center comes out clean, 35 to 40 minutes. Immediately invert pan on heat proof serving plate, leave pan over cake a few minutes. Remove pan and scrape off any remaining brown sugar mixture onto top of cake. Serve warm, topping with sweetened whipped cream if desired.
