    Individual Soda Breads

    Makes 8 soda breads

    2 cups biscuit mix
    1/3 cup dried currants or dark seedless raisins
    3 tablespoons sugar
    1 teaspoon caraway seeds, optional
    1/2 teaspoon baking soda
    1 cup buttermilk

    Recipe



    Preheat oven to 375 degrees. Grease a large baking sheet. Combine biscuit mix, currants, sugar, caraway seeds, if using, and baking soda. Add buttermilk; stir until biscuit mix has been moistened.

    Turn the mixture out onto a floured board and knead 8 to 10 times. Form dough into 8 balls and place on the greased baking sheet. Score each ball into quarters with a sharp knife making the cuts about 1/4-inch deep.

    Bake 15 to 20 minutes until golden brown and the loaves sound hollow when gently tapped. Serve warm.
