Pumpkin Puff Pankcakes
List of Ingredients
2 eggs
1 cup milk
1/2 cup cooked pumpkin
1 3/4 cups bisquick
2 tablespoons sugar
1/2 teaspoon each cinnamon, nutmeg and ginger
1/4 cup vegetable oil
Recipe
Beat eggs in small mixer bowl on high speed 5 minutes or till thick and lemon colored. Stir in remaining ingredients. Pour batter by tablespoonfuls onto meduim-hot ungreased griddle. Bake till puffed and bubbles begin to break. Turn and bake other side till golden brown. Makes about 5 dozen 2-inch pancakes.
