Quick Blueberry Cobbler
Heat oven to 400-degrees. Mix 1 (21-oz.) can blueberry filling and 1 teaspoon grated orange peel in ungreased 1 1/2-quart casserole. Heat in oven 15 minutes while preparing topping.
Stir 1 cup bisquick baking mix, 1 tablespoon sugar, 1/4 cup orange juice and 1 tablespoon butter (softened) to a soft dough. Drop dough by 6 spoonfuls onto hot blueberry mixture. Bake until topping is light brown, 20 to 25 minutes. Serve warm. Top with light cream if desired. Serves 6.
Variation: Cherry-Almond Cobbler: Substitute 1 (21-oz.) can cherry pie filling for the bluberry filling, 1/2 teaspoon almond extract for the orange peel and 1/4 cup milk for the orange juice. Stir 2 tablespoons toasted slivered almonds into the dough.
