SAUSAGE PIE
List of Ingredients
1 pound ground, lean sausage
1 1/2 cups chopped onion
1 1/2 cups of milk
3/4 cup of biscuit baking mix
3 eggs
1/2 teaspoon salt
1/4 teaspoon pepper
2 tomatoes, sliced
1 cup of shredded cheddarRecipe
Heat oven to 400 degrees. Grease large pie plate (10-inch) Cook the sausage and chopped onion over medium heat until sausage is brown; drain. Spread in plate. Beat eggs, milk, baking mix, salt and pepper until smooth. Pour over sausage. Bake 25 minutes.
Top with tomatoes; sprinkle with cheese and return to oven. Bake until knife inserted in center comes out clean. About 5 or 8 minutes more. Let stand for 5 minutes before cutting. Serves 6-8.
