Banana Bread

Here is a good family recipe. It's a very moist bread. I also make them in 2-3 prepared coffee cans, that I have greased and sugared ( a small 13 oz. size filled half-way). The sugar gives it a crunchier texture. The times will have to be adjusted slightly but the toothpick test will tell you when it's done. I then wrap it in colored saran wrap and tie a raffia bow around it to give as gifts. A 1/4 inch slice makes a perfect coffee or tea cake that fits nicely on a dessert plate.
3 1/2 cups flour
3 teaspoons baking powder
1 teaspoon salt
1 teaspoon baking soda
2 cups mashed ripe bananas
2 tablespoons lemon juice
3/4 cup shortening or margarine
1 1/2 cups sugar
3 eggs
1/2 cup milkRecipe
Sift together all the dry ingredients except the sugar. Add the lemon juice to the bananas. Cream shortening and sugar together till fluffy. Alternately add dry ingredients and milk. Beat after each addition and fold in banana mixture. Pour into 2 prepared 5x9 inch loaf pans. Bake at 350 degrees for 50-60 minutes. Cool in pans for 10 minutes. Remove from pans and cool on rack.
