    Coconut Loaf

    List of Ingredients




    Makes One Loaf
    1 cup Unsweetened Coconut, toasted
    2 cups Flour
    1 Tablespoon Baking Powder
    1/2 teaspoon Salt
    3/4 cup sugar
    1 large egg, beaten
    1/4 cup Canola Oil
    1/2 cup Coconut Milk
    1/2 cup Milk
    1 teaspoon Vanilla

    Recipe



    Pre-heat oven to 350 degrees, lightly grease a 9-inch by 5-inch loaf pan with non-stick cooking spray; set aside. Toast the coconut in a dry skillet for a few minutes over medium-hi heat.

    In a large mixing bowl, sift together the flour, baking powder, salt and sugar, adding the toasted and cooled coconut. In separate bowl, mix egg, oil, coconut milk, milk, and vanilla. Add the wet mixture to dry mixture and stir until blended.

    Pour the bread batter in to the prepared loaf pan and bake for 1 hour. Test the center of the loaf to make sure it is baked through. Allow the loaf to rest in the pan for 10 minutes before inverting onto a wire rack to cool completely.

    Slice to serve, store in an airtight container or plastic wrap.
