    Diabetic Fruit Tea Bread

    List of Ingredients




    1/2 cup hot tea
    1 1/3 cups mixed dried fruit
    5 tablespoons orange juice
    Sugar-free sweetener equivalent to 6 tablespoons sugar
    1 egg, beaten
    2 cups whole wheat flour
    2 teaspoons baking powder
    1/4 teaspoon cinnamon

    Recipe



    Pour tea over dried fruit, cover and soak overnight then discard any unasorbed tea. Preheat oven to 350 degrees. Combine orange juice, sweetener and beaten egg. Add this mixture to soaked fruit. In a seperate bowl, combine flour, baking powder and cinnamon, stir into fruit mixture. Pour into a 1-pound loaf pan that's been sprayed with a non-stick spray. Bake for 45 minutes. Cool on a wire rack. Makes 12 slices at 100 calories per slice.

    Each slice contains 20 grams of carbohydrates, 3 grams of fiber, 3 grams of protein and 1 gram of fat.
