    Glazed Lemon Bread

    List of Ingredients




    3 tablespoons oil
    3/4 cup sugar
    2 tablepoons fresh lemon juice
    2 eggs
    1 3/4 cups flour
    2 1/2 teaspoons baking powder
    1/2 teaspoon salt
    1/2 cup milk
    1 tablespoon lemon zest
    Lemon Glaze (recipe follows)

    Mix oil and sugar. Stir in lemon juice. Add eggs one at a time, beating thoroughly after each addition. Mix flour, baking powder and salt. Add to egg mixture alternately with the milk. Stir in lemon zest. Beat well. Spread into greased and lightly floured 8x4x2-inch loaf pan. Bake at 325 degrees for 45 minutes or till toothpick comes out clean when inserted near center. Brush with glaze. Return to oven for 5 minutes. Brush again with the glaze. Bake 5 minutes longer. Let stand in pan on wire rack for 10 minutes. Turn out of pan. Cool. Store airtight. Bread is best if allowed to stand for 1 day before cutting. Delicious spread with cream cheese or used for tea sandwiches.

    Lemon glaze: Mix together 1 tablespoon fresh lemon juice and 2 tablespoons sugar.
