Lemon Poppy Seed Bread
List of Ingredients
Makes one 4x7 1/2 inch loaf
3/4 cup sugar
2 eggs
1/2 cup milk
1/2 cup (1 stick) butter, melted and cooled
1 tablespoon lemon extract
1 1/2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3 tablespoons poppy seedsRecipe
Preheat oven to 325 degrees. Grease and flour 4x7 1/2 inch loaf pan. Combine sugar and eggs in large bowl and beat until very light and fluffy. Slowly beat in milk. Add butter and lemon extract and blend well. Sift together flour, baking powder, baking soda and salt. Add to sugar mixture with poppy seeds and stir to blend. Turn batter into prepared pan. Bake until bread is golden and toothpick inseerted in center comes out clean, about 50 to 60 minutes.
