Brown Sugar Pecan Brownies
List of Ingredients
2 1/2 cups flour
1 pound light brown sugar
1 cup (2 sticks) unsalted butter, cut into 1/2 inch cubes
2 eggs
1 teaspoon vanilla
1 1/2 teaspoons baking powder
pinch of salt
1 cup pecans, choppedRecipe
Preheat oven to 350 degrees. Lightly butter 9x13 inch baking pan. Combine 1 1/4 cups flour with 1/3 cup brown sugar in medium bowl. Cut in 1/2 cup butter till mixture resembles coarse meal. Press into bottom of prepared pan. Bake 15 minutes.
Meanwhwhile, cook remaining brown sugar and 1/2 cup butter in medium saucepan over low heat until sugar dissolves. Beat eggs in large bowl of electric mixer till pale yellow and ribbon forms when beaters are lifted. Gradually beat in brown sugar mixture. Stir in vanilla, blending thoroughly.
Sift reamining 1 1/4 cups flour with baking powder and salt. Blend into brown sugar mixture. Stir into pecans. Spread mixture over baked crust. Bake 25 minutes. Cool in pan on rack. Cut into squares. wrap brownies tighly in plastic and store in airtight container.
