    Butterscotch Frosting

    List of Ingredients




    1 cup packed brown sugar
    1/3 cup butter or margarine, cut up
    1/3 cup heavy or whipping cream

    In 1 quart saucepan, heat brown sugar, butter and cream to boiling over high heat, stirring ocasionaly. Set candy thermometer in place and continue cooking till temperature reaches 240 degrees or soft ball stage. Transfer mixture to small bowl. With mixer at medium speed, beat 3 minutes, till thickened and frosting is of spreading consistency. Makes 1 cup plus 2 tablespoons (enough for one 8 or 9 inch layer cake).
