    Cheesecake Factory Key Lime Cheesecake

    List of Ingredients




    1-3/4 cup graham cracker crumbs
    1 cup+1 tablespoon sugar
    1 teaspoon vanilla
    3 eggs
    5 tablespoons melted butter
    3-8 ounce packages cream cheese, softened
    1/2 cup fresh lime juice (about 5 limes)
    whipped cream

    Preheat oven to 350 degrees. Make crust; mix cracker crumbs & butter & 1 tablespoon sugar in medium bowl. Stir till all is well coated. Keep crumbly. Press into 8" springform pan or 2-9" pie pans. Bake crust for 5 minutes and set aside till ready to fill. In a large bowl mix cheese, sugar, and vanilla with electric mixer till smooth. Add lime juice** and eggs and continue to beat till smooth and creamy. Pour into pan(s). Bake 60-70 minutes. If the top of cake is turning light brown it's done. Remove from oven and allow to cool. When it has come to room temperature put into refrigerator. When it has chilled, remove the pan sides and cut into 8 equal pieces. Serve with whipped cream.

    **If you use Key lime juice use 1/4 cup instead of 1/2 cup as Key lime juice is more potent. You can also use bottled lime juice instead of the 5 fresh limes.
