Coconut Cherry Snack Cake
List of Ingredients
1 1/2 cups butter or margarine, softened
3 cups sugar
6 eggs
2 teaspoons vanilla
1 teaspoon almond extract
2 3/4 cups flour
1 cup flaked coconut
1 cup walnuts or pecans, chopped
1 jar (10 ounces) maraschino cherries, chopped and well drainedRecipe
In a large mixing bowl, cream the butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in extracts. Add flour; beat till blended. Fold in the coconut, nuts and cherries. Spread into 2 greased 13x9 inch baking pans.
Bake at 350 degrees for 30-35 minutes or till toothpick inserted near middle comes out clean. Cool on wire racks. Yield: 2 cakes (16-20 servings per cake)
