    Cornmeal Pound Cake

    List of Ingredients




    1 cup flour
    1/2 cup yellow cornmeal
    1/2 teaspoon salt
    1 cup butter or margarine, softened
    1 cup sugar
    4 large eggs
    1 teaspoon freshly grated orange peel
    1 teaspoon vanilla

    Recipe




    Preheat oven to 325 degrees. Grease and flour 6-cup fluted tube pan or 9x5 inch metal loaf pan.

    In medium bowl, stir together flour, cornmeal, baking powder and salt. In large bowl, with mixer at medium speed, beat butter and sugar till light and creamy, about 5 minutes. Add eggs, 1 at a time, beating well after each addition. Beat in orange peel and vanilla. Reduce speed to low; beat in flour mixture just till combined, scraping bowl with rubber spatula.

    Pour batter into prepared pan. Bake 1 hour 5 minutes, or till cake pulls away from sides of pan and toothpick comes out clean. Cool in pan on wire rack 10 minutes. With small knife, loosen cake from sides of pan; invert onto wire rack to cool completely. Makes 10 servings.
