    Lemon Pudding Cake

    Pudding pools in the bottom part of this lemon cake, so spoon up and enjoy.

    5 eggs, seperated
    1/2 cup fresh lemon juice
    2 teaspoons grated lemon rind
    2 tablespoons unsalted butter, melted
    1 3/4 cup flour
    1/2 teaspoon salt

    Recipe



    Heat oven to 350 degrees. Coat sides of 2-quart baking dish with cooking spray. Beat together egg yolks, lemon juice, rind, butter and 1 1/4 cups sugar in large bowl for 2 minutes or till blended. Add milk, flour and salt; beat at low speed just till combined. Beat egg whites with electric mixer till soft peaks form. Beat in remaining 1/2 cup sugar; beat till glossy peaks form, about 2 minutes. Fold whites into lemon mixture till blended. Scrape into prepared dish; set on baking sheet. Bake in 350 degree oven for 40 minutes or till toothpick inserted in cake center comes out clean. Serve warm.
