Microwave Chocolate Cake
List of Ingredients
1/4 cup cocoa
2/3 cup hot water, divided
3/4 cup + 2 tablespoons flour
1 cup sugar
1/2 teaspoon baking soda
1/2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup + 2 tablespoons oil
1 egg
2 teaspoons vanilla

Grease round micro-proof baking dish, 7 1/4 inch x 2 1/4 inches or 8x8; line bottom with plastic wrap. In small micro-proof bowl combine cocoa and 1/3 cup water; microwave on high 40-50 seconds or till very hot and slightly thickened. In medium bowl combine flour, sugar, baking soda, baking powder and salt. Add oil, remaining 1/3 cup hot water, egg, vanilla and chocolate mixture; beat till batter is smooth and well blended. Pour batter into prepared pan. Microwave on high 5-6 minutes**without turning till cake begins to pull wway from sides(some moist spots may remain but will disappear on standing). Let stand 5 minutes;invert onto serving plate. Peel off plastic wrap;cool. Frost. Makes about 8 servings.
**Time is for 600-700 watt microwave ovens.
Easy Cocoa Frosting
3 tablespoons butter/margerine,softened
1/4 cup cocoa
11/3 cups powdered sugar
2-3 tablespoons milk
1/2 teaspoon vanilla
In small mixer bowl combine all ingredients;beat to spreading consistency. Makes about 1 cup frosting.
