    Perfectly Chocolate Fudge Cake

    List of Ingredients




    This makes a fudgy layer between the cakes, because you frost the first layer while it's still warm.

    2 cups sugar
    1 3/4 cups flour
    3/4 cups cocoa
    1 1/2 teaspoon baking soda
    1 teaspoon salt
    2 eggs
    1 cup milk
    1/2 cup vegetable oil
    2 teaspoons vanilla
    1 cup boiling water

    Cake:
    Preheat oven to 350 degrees. Grease and flour two 9- inch round cake pans. Combine dry ingredients in large bowl. Add eggs, milk, oil and vanilla. Beat 2 minutes on medium speed. Stir in boiling water (batter will be very thin). Pour into pans. Bake 30-35 minutes. Cool 10 minutes; frost first layer. Put second layer on top. Let cool completely. Frostthe rest of the cake. Makes 10-12 servings.

    Fudgy frosting: Melt 1/2 cup (1 stick) butter or margarine. Stir in 2/3 cups cocoa. Alternately add 3 cups powdered sugar and 1/3 cup milk, beating to spreading consistancy. Add more milk , if needed. Stir in 1 teaspoon vanilla. Makes about 2 cups.
