Pound Cake
List of Ingredients
3 3/4 cups sifted cake flour
1 1/2 teaspoons baking powder
1 teaspoon grated lemon or orange rind
1 teaspoon nutmeg
1 3/4 cup butter
2 1/4 cup granlulated sugar
8 eggs, separated Recipe
Sift together flour and baking powder three times. Add lemon or orange rind and nutmeg to butter, and mix on medium speed until fluffy and creamy. Gradually add 1 3/4 cup of the sugar while continuing to mix until light. With clean beaters mix egg yolks until light colored and thick enough to fall from beater in a heavy continous stream. Add to butter mixture and beat thoroughly. With clean beaters beat egg whites until stiff enough to stand up in peaks but not dry. Add remaining 1/2 cup sugar, 2 tablespoons at a time, beating after each addition until sugar is just blended. Stir 1/3 of the flour mixuter into the butter mixture, then 1/2 of the egg whites, repeating until all is used, beating very thoroughly after each addition. Turn into 3, 8 or 9 inch-pans that have been greased, paper lined, and greased again. Bake in a 350 degrees oven for 30-40 minutes or until done.
Note:This recipe can be doubled but it takes a very strong mixer. Time varies according to size of pans.
