Almond Florentines

This makes a wonderful presentation and is so tasty you won't beleive how easy it actually is.
6 tablespoons butter, cut-up (no substitutions)
1/4 cup heavy cream
1 tablespoon light corn syrup
1/2 cup sugar
2 tablespoons flour
1 cup slivered almonds, finely chopped
1/2 cup candied orange peel, finely chopped
8 squares, (8ounces) semisweet chocolate, melted
Recipe
Preheat oven to 350 degrees. Line a large cookie sheet with parchment paper or sil pat. In a 1-quart saucepan, combine butter, cream, corn syrup, sugar and flour and heat to boiling over medium heat, stirring frequently.
Remove saucepan from heat;stir in almonds and orange peel. Drop batter by rounded teaspoons, 3 inches apart, on prepared cookie sheet. Bake 10 minutes, or just till set. Cool on cookie sheet 1 minute. Transfer to wire racks to cool. If cookies become too hard to remove, return sheet to oven to soften.
Repeat with remaining batter. With small metal off-set spatula or butter knife, spread flat side of each cookie with melted chocolate. Return to wire racks, choclate side up, and let stand till chocolate has set. Makes about 4 dozen cookies.
