Cherry Nut Cookies

1/2 cup butter or margaine at room temperature
1 cup brown sugar, packed
1 egg, slightly beaten
1 teaspoon vanilla
2 cups flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup chopped walnuts
1/3 cup chopped maraschino cherriesRecipe
Cream together the butter and sugar. Beat in egg and vanilla till smooth. Blend in flour, baking soda and salt. Stir in walnuts and cherries. Shape the dough into a roll about 14-inches long. Wrap in foil or plastic wrap and refrigerate overnight. With a sharp knife, cut dough into 1/4-inch slices. Place on ungreased cookie sheets.
Bake at 375 degrees for about 10 minutes or till just golden brown. Remove while warm from the cookie sheets. Cool on a rack. Store in airtight containers. Makes 4 1/2 dozen.
