Lemon Butter Cookies
List of Ingredients
1 cup butter, softened
2 cups sugar
2 eggs, beaten
1/4 cup milk
2 teaspoons lemon extract
1/2 teaspoon salt
4 1/2 cups flour
2 teaspoons baking powder
1/4 teaspoon baking soda
colored sugar, optionalRecipe
In a mixing bowl, cream butter and sugar. Add eggs, milk and extract. Combine dry ingredients, gradually add to creamed mixture. Cover and chill for 2 hours. Roll out on a lightly floured surface to 1/8 inch thickness. Cut with a 2 inch cookie cutter dipped in flour. Place 2 inches apart on ungreased cookie sheets. Sprinkle with colored sugar if desired. Bake at 350 degrees for 8-9 minutes or till the edges just begin to brown. Remove to wire racks to cool. Yield: about 13 dozen
