Lemon Thins
List of Ingredients
1/2 cup vegetable shortening, at room temperature
2 tablespoons unsalted butter, softened
1 cup sugar
1/2 teaspoon vanilla
1/2 teaspoon lemon extract
1 1/2 tablespoons freshly grated lemon zest
1/4 cup fresh lemon juice (about 1 lemon)
1 1/2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt

With a mixer cream together the shortening, butter, and the sugar. Add the vanilla, lemon extract, lemon zest, and the lemon juice, beating till smooth. Into another bowl sift together the flour, baking powder the baking soda and the salt. Add to the wet ingredients a half cup at a time till all is incorporated and smooth.
On a piece of wax paper form the dough into a log 1 1/2 inches in diameter. Chill the log in the refrigerator for at least 2 hours.
Cut the log into 1/8 inch slices with a cold sharp knife and bake 2 inches apart on an ungreased baking sheet in a preheated 350 degree oven for 8-10 minutes or till the edges are lightly golden.
Transfer the cookies immediatly with a metal spatula to cooling racks. Let cool. Sift powdered sugar lightly over cooled cookies.
Makes about 4 dozen. Serve with ice cold lemonade.
